This super simple Katsu Curry is a regular on the Hakes family meal roster. With us being veggies, we quite often serve it with Quorn Crispy Nuggets – they work brilliantly. Also if you want to make it Vegan, Waitrose do some BRILLIANT Crisp-Crumbed Seitan Slices.

You could breadcrumb some Aubergine or Sweet Potato, but that makes it less of a Simple Katsu Curry if you’re having to mess around. Heck, I’m sure this could work with basic bitch Chicken Nuggets too! You’ll have to let me know in the comments! Prep / Cooking time – 5mins / 20mins

Super Simple Katsu Curry Ingredients

Good glug Olive oil
2 Onions
3 Cloves of Garlic
1 Tsp Ginger Paste
1 Tbsp Tomato Purée
1 1/2 Tbsp Curry Powder
1 Tsp Turmeric
1/2 Tsp Five Spice
1/2 Tsp (good long grind) Black Pepper
2 Tbsp Flour
600ml Veg Stock

Super Simple Katsu Curry Method

1 – Roughly chop the onions and fry in the oil on a low heat for 8-10mins until soft and golden.

2 – Chop the garlic and add to the pan with the ginger for 2 mins, still on a low heat.

3 – Add the spices and pepper, stir until coated in the oil and fragrant, add the tomato purée and cook for 2 minutes.

4 – Sprinkle on the flour and mix until a sticky paste.

5 – Slowly add the stock and increase the heat to bring it to a boil, simmer for 8mins stirring well as it thickens.

6 – Blitz the sauce with a blender until smooth, return to the pan and simmer gently for 5 minutes.
